Northern Forest Cricket Crackers

This is the beginning. Pouch of delicious, cricket crackers made by the recipe of our own enthusiastic master chef Jarmo. These crackers are delicious as a snack and go perfect with cheeses and different dips.

One of the great Griidy-Farmers behind the crickets in this bag are Tolonen brothers from Honkajoki.

Ingredients

Cornmeal, water, sunflower seed (22%), sunflower oil/rapeseed oil, flaxseed (9,5%), sesame seed (9,5%), cricket (6%), salt, fennel seed. May contain traces of gluten.

Cricket Muffin

1 egg
120ml milk
4 tablespoons vegetable oil
200g plain flour
100g caster sugar
2 teaspoons baking powder
1/2 teaspoon salt
10g whole crickets

1. Preheat oven to 200 C / Gas 6. Grease muffin tin or use bun paper cases.

2. Beat egg with a fork. Then stir in milk and oil. Sift flour into a large bowl. Add sugar, baking powder and salt. Add egg mixture to flour and stir until flour is moistened.

3. Add the Northern Forest Whole Crickets and mix well.

4. Fill muffin cups 2/3 full. Bake 20 to 25 minutes until golden brown.
